Bibingkinitan Mini-Bibingka is a rice cake made from 100% rice flour, topped with generous servings of salted egg and cheddar cheese that you can get even on mid-summer day. Different from the traditional way of cooking bibingka where it was cook over a burning charcoal, Bibingkinitan is cooked in an oven but it has the taste and feel of the original bibingka that you can buy in-front of the church after a dawn mass during Christmas season.
